
This is the Chancho a la Chilena - it's a pork loin that is slow cooked for 3 hours in a broth made of water, onions, carrots, celery, red wine vinegar, and various herbs and spices. The meat is extremely tender - with 9 hungry people on hand, I needed to make two of these. That's over 6 hours of cooking for the meat alone!
